Gluten-Free Banana Bread

Delicious and nutritious Gluten-Free Banana Bread (also dairy, sugar and egg free)

Is banana bread really a bread, or is it a cake? Well, despite its name, it’s basically a cake.

Our recipe contains gluten-free flour, flaxseed instead of eggs, hazelnuts, cinnamon, our lemongrass tea instead of milk and more.

The result is a moist, lightly sweetened, nutritious morning meal or perfect afternoon snack with high-health benefits.

What’s not to love about it? It’s delicious on its own. Although, if you want to turn it into a soul-soothing dessert, you can top your slice with a spoonful of Greek or Coconut yogurt for a protein boost. Or top it with a drizzle of cream honey. We went slightly overboard with our Cream honey with Lemongrass for the full experience.

Ingredients:

  • 1 tablespoon flaxseed meal
  • 3 tablespoons extra-virgin coconut oil, melted
  • 3 medium-ripe bananas, mashed + 1 extra for garnish
  • 3 tablespoons raw honey, we used our Cream honey with lemongrass
  • 2 Tea Bags of CC Tea or 2 tsp CC Tea in leaves
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 1 1/4 cups almond meal
  • 2 1/2 cups gluten-free flour
  • Optionally: 3/4 cup almonds / hazelnuts, finely chopped

Method:

1. In a small bowl, stir together the flaxseed meal with 2 tablespoons of water. Allow the mixture to sit for 2 min to thicken slightly.

2. Make a cup (100ml) of CC Tea. Pour hot water over Tea Bags or tea leaves and let it steep for 5 min. Then strain the tea.

3. Preheat the oven to 180°C. Lightly grease a loaf pan with coconut oil and set aside or use baking paper or silicone mold instead.

4. In a large bowl, whisk together the bananas, oil, honey, baking powder, salt, cinnamon, and flaxseed meal-water mixture. Add the almond meal and flour. Slowly add in CC Tea until you get the right texture for the biscuit and stir until combined. Fold in the almonds and hazelnuts (optionally).

5. Pour the batter into the prepared loaf pan.

6. For garnish slice a banana in half lengthways and slightly press into the batter.

7. Place in the oven for 45min – 1h, or until the bread feels firm and the top has turned golden brown and is slightly cracked. If the bread starts to brown too quickly, cover with foil and continue baking. Check that it’s cooked by sticking a toothpick inside and see if it comes out clean.

8. When it’s done, let it rest in the tin for 10 min before removing. Then place it on a cooling rack for a further 10 min before slicing.

Enjoy the bread warm when it’s the best, but it’s no less delicious when completely chilled.

Store leftovers in the fridge for up to 3 days. This bread also freezes well. Wrap the loaf in foil and a freezer-safe plastic bag and store in the freezer for up to 2 months.

Bananin kruh brez glutena

Bogat in hranljiv bananin kruh brez glutena, sladkorja, mlečnih izdelkov in jajc!

Bananin kruh pravzaprav ni kruh. Je sadni kolač, ki bolj kot na kruh spominja na sladico. 

Naš recept vsebuje moko brez glutena, laneno seme namesto jajca, lešnike, cimet, naš čaj limonske trave namesto mleka in še več.

Rezultat je omamno dišeč, mehek, sočen, rahlo sladek, hranljiv jutranji obrok ali popolen popoldanski prigrizek!

Že sam po sebi je tako dober, da ob sebi ne potrebuje ničesar. Dovolj je že skodelica najljubšega čaja. Če pa ga želiš spremeniti v pregrešno sladico, debelemu kosu peciva dodaj še kaj. Kaj? Za malce bolj zdravo verzijo mu dodaj veliko žlico grškega ali kokosovega jogurta in žličko medu. Mi smo ga za piko na i prelili z žličko kremnega medu z limonsko travo.

Sestavine:

  • 1 žlica lanenih/ chia semen
  • 3 žlice ekstra deviškega kokosovega olja (stopljeno)
  • 3 srednje zrele banane, pretlačene + 1 (za dekoracijo)
  • 3 žlice medu, uporabili smo naš Kremni med z limonsko travo
  • 2 filter vrečki CC Tea ali 2 čajni žlički CC Tea v lističih
  • 3 1/2 čajne žličke pecilnega praška
  • 1/2 čajne žličke morske soli
  • 1/2 čajne žličke mletega cimeta
  • 1 1/4 skodelice mletih mandljev
  • 2 1/2 skodelice brezglutenske moke
  • Po želji: 3/4 skodelice mandljev / lešnikov, drobno sesekljanih

Postopek:

1. V majhni skledi zmešaj zmleta lanena semena z 2 žlicama vode. Pusti, da zmes stoji 2 min, da se nekoliko zgosti.

2. Pripravi skodelico (100ml) čaja CC Tea. Filter vrečke ali lističe prelij z vročo vodo in namakaj 5 min. Nato odcedi.

3. Pečico segrej na 180°C. Pekač za kruh premaži s kokosovim oljem ali uporabi peki papir oziroma silikonski model.

4. V večji skledi zmešaj banane, olje, med, pecilni prašek, sol, cimet in namočena lanena semena. Dodaj mlete mandlje in moko. Postopoma dolivaj tudi čaj CC Tea, dokler ne dobiš primerne teksture za biskvit. Po želji lahko dodaš mandlje in lešnike.

5. Zmes prelij v pekač. 

6. Za okras prereži banano po dolžini na polovico in jo rahlo pritisni v testo.

7. Peci približno 45 min – 1h oziroma dokler zobotrebec po vbodu v kolač ne ostane suh. Vrh naj bo zlato rjav in rahlo razpokan. Če začne kruh prehitro rjaveti, ga pokrij s folijo in nadaljuj s peko.

8. Preden ga odstraniš iz pekača, naj počiva 10 min, nato pa ga pred rezanjem postavi še za 10 min na rešetko.

Še rahlo topel je najboljši, nič manj okusen pa povsem ohlajen. 

Bananin kruh lahko hraniš nekaj dni. Kakšen dan lahko na sobni temperaturi, sicer pa raje v hladilniku. Ne glede na to kje ga hraniš, ga prej zavij, da se ne izsuši. Kruh lahko celo zamrzneš. Ne celega, pač pa narezanega na rezine.

Iced CC Tea with grapefruit and basil

Serves: 1 cup – 3 dcl

Total preparation time: 5 minutes

INGREDIENTS

  • CC Tea filter bag/ 1 full teaspoon of CC Tea leaves
  • 1/2 of grapefruit
  • 4 leaves of basil
  • a piece of peeled ginger
  • a slice of lime
  • ice cubes

METHOD

Bring one cup of water (2,5 dcl) to 80°C in a pot or saucier and add CC Tea filter bag or loose leaves. After 5 minutes discard tea bag or tea leaves. Grab a glass, add ice cubes and pour over the tea. Add grapefruit, basil leaves (which you previously gently swallow with your fingers), compressed ginger and squeezed lime.

Garnish with a piece of grapefruit and leaves of basil. Enjoy in delicious, slightly bitter taste 🙂

Iced CC Tea with mango

Serves: 1 cup – 3 dcl

Total preparation time: 5 minutes

INGREDIENTS

  • 1 CC Tea filter bag/ 1 full teaspoon of CC Tea leaves
  • 0.5 dcl of 100% mango juice
  • ice cubes

METHOD

Bring one cup of water (2,5 dcl) to 80°C in a pot or saucier and add CC Tea filter bag or loose leaves. After 5 minutes discard tea bag or tea leaves. Grab a glass, add ice cubes and pour over the tea. Finally, add mango juice.

Garnish with a slice of mango and enjoy in delicious sweet taste 🙂
